Plenty by Yotam Ottolenghi
One of the cookbooks that helped completely change the way people thought about vegetable cooking.
Plenty brings together Ottolenghi's bold, colourful approach to vegetables, grains, pulses, mushrooms, aubergines, tomatoes and more — combining Mediterranean and Middle Eastern influences with big flavours and unexpected combinations.
The recipes grew partly from his New Vegetarian column for The Guardian, despite Ottolenghi himself not being vegetarian. Beautiful photography by Jonathan Lovekin makes it another cookbook that's as enjoyable to flick through as it is to actually cook from.
